I'm new at Malifaux and I'm playing Leviticus tonight....yeah any ideas. That whole sacrifce/killing and hollow waif pop is ridiculous. How do I deal with it?

Kill both him and the hollow waif in the same turn... ? It might involve cheating down your damage one turn so he doesn't die and is on 1 or 2 life then early next turn you dispatch him and then go Waif hunting.
